Ingredients (Serves 6):
Fresh lamb — mix of boneless top round + 2 pieces of bone-in leg or hand shank (750–1000g / ~2 lbs)
1 large Spanish/white onion, chopped
Red kidney beans — ¾ cup raw (pre-soaked 4 hrs) — or 2 cups canned cooked beans
Freshly ground black pepper — ½ tsp
Turmeric powder — 1 tbsp (max)
Salt — 1 tbsp
Iranian dried limes (Omani limes) — 6 pcs (dark type preferred)
Verjuice (آبغوره) — 2 tbsp (adjust to taste)

Vegetable oil  minimum 1 cup, ideally 2.5 cups

Fresh Herb Mix (total 1 kg net, stems removed):
Parsley — 250g
Cilantro — 250g
Persian leek “Tareh” — 250g (or leek / scallion / chives alternatives)
Fenugreek leaves — 250g (fresh or dried “Kasuri Methi”)
⚠ Tip: Ethnic food markets (Indian, Lebanese, Turkish, Chinese) often offer fresher herbs than western chain supermarkets.
