Inside a full working day at Parsana Sandwich Café — a new Italian sandwich spot in Tehran focused on clean, handmade food.

In this silent food documentary, we spent two full working days with the Parsana team, capturing the entire process — from early-morning preparation to baking their own Italian-style bread and serving freshly made sandwiches throughout the day.

Parsana is a single-product concept: only sandwiches.

Not because of limitations — but because of quality.

No processed meats.

No sausages or bologna.

No artificial flavor enhancers or preservatives.

All meats are freshly sourced, personally selected, and marinated in-house. Even the dough is handmade using a traditional Italian biga fermentation, taking up to three days to develop flavor and texture.

Behind the counter is a young, energetic team and a passionate chef whose movements, rhythm, and workflow give this place its soul. What you see here is not just food — it’s a daily routine built on discipline, craft, and care.

This episode focuses on the sandwich-only branch of Parsana.

Their older location — dedicated entirely to clean, handmade pizza — will be featured in the next documentary.
