I don't get , doesn't the french Army have any Helicopter or Plane for fire fighting purposes? I would think dropping water/fire extinguish material few times from the air would take care of this.

Do you mean the French government did it in order to have a convenient excuse to intensify its crackdown on the movement?

Dumping water could damage the structure. But it also could control the fire before it propagate. A damaged structure can be repaired. A burnt stracture?.. I don't see the rational of their decision.
