Nazanin, Khodapaz?! I love it! I will use that word! I have been cooking since I was 12, but Abgoosht was never one of the things I learned to cook, until recent years when I gave it a try. I guess we could call Abghoosht an Iranian "comfort food?"
Another thing I love, especially during winter is "Taas Kabaab," which is a stew of meat, fruits, and vegetables. I should find a good, low calorie recipe for it, as I will be on a diet now until Nowruz!
The lamb shank looks scrumptious! I will see if I can get lamb shank in the supermarket. I will definitely try it, but I will do a modified version of her method. Her process takes up to 4 hours to cook it, it ties you up in the kitchen. No thanks! :O))) I will use my pressure cooker, it will take only 30 minutes! You don't need to stand around to watch it! It saves time and energy!
Nazy joon, want to make it low fat? Take out the meat! I bet you it will be just as delicious...... oh and of course the name will change! But, seriously there are enough great ingredients in that dish to make it delicious without the meat. try it...
I made a load of ab-goosh with my pressure cooker! OMG! It is delicious. We don't have lamb shank at Albetsons here, so I used lamb shoulders instead. I don't have dry Persian lime, so I used lemon juice instead. This recipe and dish is definitely a keeper!
