Last night I put some rice in the rice cooker. One cup of rice and three cups of water. I turned it on and forgot about it until I woke up in the morning and went into the kitchen to have some breakfast. The rice had turned a little crispy, but not browned. I don't know why my rice cooker does not make tahdig. Maybe the ones sold in Peru are different than the ones in Iran. Anyway, I still had a nice meal for breakfast. My friend Shahrzad, who was visiting Cusco from Vancouver, had brought me smoked salmon. It tasted delicious with the rice, some tomatoes and yoghurt with chia seeds. Even at 7 in the morning.

Because the Iranian rice cookers where designed to make tahdig. I know this because we make our rice differently than others.
kabear is right. We first bought a rice cooker that was not from a Persian store and it did not make tahdig, a great disappointment! We then bought one from a Persian store and ..............ooh baby!
